Twenty one one…here we come…

Happy New Year to you all…and may it be a year filled with fun, laughter and plenty of sweet treat goodness!!! Building at Chez Dré hasn’t stopped, and the tilers have passed back the relay torch to the builders from FICUS. Even though it’s only a hint of colour, it’s starting to take shape with those kind of details. Watch out-all tiled up and ready to rock…

Week 5-Post Christmas…but ain’t stopping!

Happy holidays and season’s greetings to you all!  I hope everyone is making the most of whatever weather Mother Nature is delivering to you at this time of year, and enjoying plenty of good food, plenty of laughs and friendship! I wonder what it will be like next year when Chez Dré is up and running? Such excitement!!! 

Here in South Melbourne, the weather hasn’t kept us away at all. We’re straight back into it and the tiling has all started in the kitchen… 

So Week 4 of building Chez Dré is coming to an end. The builders have finished up, packed there tools and hung up their work boots until the new year. The electricians are tying down the last few cables, and getting all the switches ready for the major equipment that is going to be running this space. The plumber has primed us for gas and is ready to start dealing with the little details of bathrooms, etc. when he gets back too. But lucky for us, not everyone does the whole holiday season, and yesterday I was happy to hear that the 27th-29th of December the tiling is going to take place which is such awesomeness!!! But a definite highlight of this week has been the steel guys and their magnificent skills on all the black steel window frames they made from scratch on site. From hand drawn sketches, to a few calculations here and there, to the hours of soldering to the resulting structures, has been such a fantastic process to watch. Such big ups to Phil and Mike for there skills, knowledge and study to their craft! Next step: window panes and door fit-out to match!

Week 3; part deux…

So officially it’s the start of Week 4 of building Chez Dré, but there’s been so much happening behind the behind scenes that there is a build up of action bursting to be shared. Before I get any furthur behind schedule, cause the guys are certainly not, here goes a little summary of the demolitions and heavy duty black steel that is happening in the space. 

To keep the originality of what this space really is, we have tried to keep true to the industrial warehouse, yet bring a sense of sophistication, detailing and of course more light.

Greetings folks and apologies for not updating as often as necessary. Things at Chez Dré have been moving along very quickly indeed that sometimes it feels hard to keep up. All the guys involved on site have just been phenomenal and are absolute guns. I’m sure I drop that line in every post! And along with being fantastic, they are always able to crack a joke and have a giggle amongst themselves, which makes it a truly fun construction site to be on. 

The steel boys, Phil and Mike, have been pumping it out with the soldering machines and metal cutters creating the frames for the new windows and openings. Gerry, Pete and Aaron, from FICUS, have been putting up the kitchen walls, inside and outside, like no tomorrow, and getting it ready for the tiles and other details to go in over the next couple of weeks. Tab has been busy putting in amazing exposed copper pipes for the hot water and gas heaters. The canopy crew were in to fit the large stainless steel hood. The concrete cutter was busy drilling through 30cm of concrete to be able to fit the exhaust out of the top of the building. And finally, Blair and Darren have been laying down so much electrical cabling it is slightly mind boggling.

Staying true to the warehouse, all the electrics and gas lines will be left exposed. There is a whole lot of power coordination happening in this space!

A little bit before, then after…

Week 2 of building Chez Dré has been full steam ahead. The number of different trades people have been awesome: builders (FICUS dudes Peter and Gerry have been guns), steel workers, canopy installers, electricians, demolition guys, brick layers, building surveyors, concrete cutters, plumbers, and architects. While I have been busy running around choosing tile colours, gathering leather samples, meeting with artists and finalising finishes, these group of guys have all been putting an extraordinary amount of energy into making the dream of Chez Dré a reality. But orchestrating and coordinating this massive project is an amazing gentleman that goes by the name of Stephen Sam. Without his constant perseverance and diligence, none of this would have ever taken off the ground, and instead would have remained this ’ great idea’ that sounded a bit too fantastic and out of this world. He has been instrumental in every single step of this process and will continue to push Chez Dré forward in the most incredible of ways! And so, as we continue to watch this place take shape, we have to pause for a second on a beautiful friday afternoon in Melbourne, and breathe real deep, and smile at what we are able to create.

Last week at Chez Dré it was all about putting the initial structural kitchen wall up and priming the space for all the works that are about to take place. So much energy seeing that wall being finally put up was just awesome! As this whole space is an industrial warehouse shell, this means initially: no power lines, no water connections, no gas outlets, etc, etc, etc. So, our biggest challenge, and such an exciting one at that, has been putting together this blank canvas from absolute scratch. From the start we always knew that the ‘stage’ was going to be the kitchen, the pastry kitchen to be more specific, so for us we wanted to create an area that drew people into being in the midst of the action. What we are seeing now are the foundations that need to be laid in order to achieve this.

Awesome Market Day…

A massive thank you for all that made it down to the North Melbourne Market today-it was fantastic, and a very busy four hours indeed! Both the vegan brownies and peanut butter cookies went down a treat, as well as the gluten free double chocolate chip cookies and the coconut roughs, which were a new edition to the table. But, the stars of the show had to be the salted butter caramel, passionfruit and chocolate raspberry macarons! Find some pics from the market…please hold back from licking the screen, back to the building of Chez Dré tomorrow!

The new edition to the repertoire…chocolate coconut roughs are happily gluten free-crunchy on the outside, gooey-chewy on the inside and organic to top it off!

We have just started building, and it’s amazing seeing a blank canvas of a warehouse slowly start to take shape. But really, it’s been months in the making, and we’re finally here. We. Have. Started. Building. HALLELUJAH!

It’s not hard to get sentimental when I see what’s going on around me. Sure, the foundations of Chez Dré might’ve only begun several months ago, but in truth, I’ve been dreaming of this for a very long time.

The excitement is mounting and I can’t wait to get cooking!
